Gluten Free: Spicy Sausage Pasta
1 tablespoon olive oil
1 pound smoked sausage (check the label to make sure it’s gluten free)
(Hormel, Smithfield, Hillshire – are a few)
1 small onion, diced
2 cups chicken broth
1 (10 ounce) can RO-TEL (BRAND ONLY!) tomatoes and green chilies, mild
1/2 cup heavy cream
8 ounces gluten free penne
1 cup Colby Jack cheese, shredded
1/3 cup thinly sliced green onions
1) Heat olive oil in a large skillet over medium-high heat until hot. Reduce the heat slightly, add the sausage and onion, and cook until lightly browned, about 4 minutes. Add the garlic and cook about 30 seconds.
2) Add the broth, tomatoes, cream, pasta, and stir until well-combined. Bring to a boil, cover the skillet, and reduce the heat to medium-low. Simmer until the pasta is tender or about 15 minutes.
3) Remove skillet from heat and stir in 1/2 cup of the cheese and, top with the remaining cheese. Cover until the cheese is melted. Top with green onions.
