There are no eggs and you can go dairy or non-dairy. The mixture is thick and holds the breading very well. The added hot sauce gives it that extra kick!

The use of maple syrup and balsamic vinegar gives this meatloaf such a good flavor. The recipe includes a Maple Glaze for the top but I have never used it. I basically put together quick and easy recipes. All of my GF recipes are being created with one person in mind! I guess since they are a no nonsense comfort kind of food they have just caught on! A little note about my recipes. Mine are more about using pre-made mixes that are easily available. I’m sure some will argue they aren’t as healthy but if you need to eat gluten free and you’re not because of time restraint – That’s NOT healthy! Our Ben has celiac disease. One day I will share the unbelievable story of recovery from just going gluten free. It wasn’t a Dr. that suggested it but it was me. Within days the transformation was amazing. So much I would love to share but for now I have been asked by his Dr. to post recipes. He treats many that are on government assistance that simply can not afford the fancy variations in many recipes. We couldn’t either so I’ve taken many recipes and made them gluten free. After tons of research and letters from companies to PROVE they have met MY guidelines I am confident with what I post. Our son’s life depended on it. Literally! (more…)

I have watched and read messages of people who are struggling with hardship and those who have had victories this week. I have seen the million man march that is to take place on 9/11/13 with the Muslims. I am concerned.
Then I see where a church has been flooded and the real effects of a natural catastrophe that has taken place. This is both here in the US and across the world. We are living in an age that the climate is changing and we are seeing things happen like never before.
